Someone has turned up the heat and its summer again! Not only are we very busy at work with silly season, but I don’t feel like eating very much. Thank goodness it’s salad and BBQ time! Salads are quick, easy and light and ideal for hot summer days, but what about the BBQ’s? Well, the men cook them don’t they?!! My husband would have me believe that he is the BBQ king and does all the work, but behind the scenes I am chopping, marinating and preparing delicious dishes to go with the sausage or chicken leg. I also marinate the meat the night before and make burgers. The Boozy Steaks are a firm favourite at our BBQs along with the Spicy Chicken Wings. The Spare Rib sauce also goes very well with chops, chicken legs or sausages, so get marinating and enjoy.
Buen Apetito

Smoky Fish Skewers

  • 350g smoked cod fillet
  • 350g cod fillet
  • 8 large raw prawns
  • 8 bay leaves

Marinade

  • 4 tbsp sunflower oil
  • 2 tbsp lemon juice
  • Grated lemon rind
  • ¼ tsp dill
  • Salt and pepper

Make the marinade by combining all the ingredients, leaving fish in marinade for 2-4hrs coating every 15 minutes. Thread fish through skewers, alternating with slices of lemon and bay leaf. Cook for 5-10 minutes on BBQ

Boozy Beef Steaks

  • 4 beef steaks
  • 4 tbsp whisky/brandy/red wine
  • 2 tbsp soy sauce
  • 1 tbsp dark muscovado sugar
  • Pepper

Place steaks in a shallow dish, combine the alcohol, soy sauce, sugar and pepper and pour over the steak. Leave for a minimum of 2 hours or overnight in the fridge. Cook for 4-10 minutes depending on the thickness of steak and personal preference.

Sauce for Barbecued Spare Ribs

  • 90ml tomato ketchup
  • 45ml clear honey
  • 30ml red wine vinegar
  • 30ml mustard
  • Salt and pepper

Mix together all ingredients and brush over the ribs. Baste the ribs during cooking with any remaining sauce.

Honey, Mint and Cucumber Salad

  • 2 x 200g tub Greek yogurt
  • 60ml (4tbsp) blended clear honey
  • 2 whole cucumbers, chopped
  • 60ml mint, freshly chopped
  • 30ml lime juice

In a large bowl mix together all the ingredients until combined and serve immediately.

Spicy Peanut Chicken Wings

  • 60ml sesame oil
  • 60ml white wine vinegar
  • 45ml crunchy peanut butter
  • 45ml clear honey
  • 30ml chilli sauce
  • 900g chicken wings or drum sticks if preferred

Whisk ingredients together to make marinade. Place chicken wings in a large container and pour over marinade. Cover and refrigerate for as long as possible, preferably overnight. Bake chicken wings in an oven 220º C for 35-45 minutes turning and basting frequently. Finish them off on the BBQ.
